We ate the last of the Nandos chicken with fresh spinach, grape tomatoes and mushrooms, and Jac made a pasta salad. As you can see, there wasn’t a lot of chicken on my plate. We’d eaten almost half a chicken each, so there wasn’t much left over for the next day!
I loved the pasta salad. I loved the crunchy textures of the carrots, capsicum, celery and gherkin. And I love pasta coated in mayo. I thought the pasta looked more like grubs or maggots than shells (!) but that didn’t put me off in the least (in fact, I think I quite liked pretending I was eating grubs). I made sure to write down Jac’s recipe so we can make the pasta salad again another time.
Jac’s pasta salad #1
125 grams pasta , cooked (we used gnocco sardo, a kind of small shell pasta)
3 tablespoons German salami, sliced (you could use ham, if you preferred)
2 tablespoons of finely diced carrot
2 tablespoons of finely diced red capsicum
2 tablespoons of finely diced celery
2 tablespoons of finely diced sweet gherkin
3/4 (three-quarter) tablespoon of finely diced white onion
3/4 (three-quarter) tablespoon of finely chopped dried chives
3/4 (three-quarter) tablespoon of finely chopped dried parsley
Black pepper to taste
1/4 (one-quarter) cup of mayonnaiseMix everything together.
Serves 2 people generously, or 3 as a side dish.
Jac asked me if I’d have included anything else in the salad – I’d have included either corn kernels, peas or chopped fresh green beans, just to add even more interesting and enjoyable textures to the dish. Next time!
We raided the freezer on Monday night and took a punt on a mystery container of red sauce. Luckily, once thawed out it was revealed to be a batch of Jac’s homemade bolognese sauce, with beef mince and mushrooms. We ate it with fusilli. Mmmm, I think the flavours got even better in the freezer.
On Thursday night, we had panfried turkey steaks. Jac ate hers with salad (sorry, no photo), and I ate mine with baked beans, and mushrooms fried in a little butter. The turkey was meaty and had a great flavour.We went shopping this morning and bought more turkey steaks. Jac’s said something about pounding them flat, rolling them up with mushrooms and garlic and baking them. Hope she does do that, as that sounds great!

Hi TFP. I was wonderig if people are allowed to use your pictures and say that they made it themselves. Because i found a particular person who has a picture of garlic bread made of hamburger buns. And the only person I know of who makes those is Jac. She also has a picture of tuna mayo sushi that looks like you had before.

Yum yum, pasta salad! Judging from the ingredients, the dish must have been full of textures and flavour. I would’ve added corn kernals to the salad as well, extra yum!
