In our bento boxes last Wednesday: leftover Original Recipe KFC, which I’d taken off the bone so it would easy and less messy to eat. Cherry tomatoes. KFC sandwiches (“recipe” at the end of this post). A little bread and butter. Corn on the cob. Salad made with leftover cooked vegetables (butternut pumpkin, potato, broccoli) and fresh vegetables (lettuce, mushroom and yellow capsicum).

Here’s the note I put in Jac’s bento box. Technically, “Hump Day” would be more correctly represented if “Weekend” was actually “Friday”. I guess I got a little ahead of myself there. :)

TFP’s KFC sandwiches
This is just one of my many versions of leftover KFC or any cold cooked chook sandwiches.

Take the chicken meat and skin off the bone, tear or slice roughly into bite-sized strips and place into a bowl.
Add mayonnaise, wholegrain mustard and season with freshly cracked black pepper to taste.
I used a ratio of approximately 3:1 mayo to mustard.

Cut crusts off two slices of bread.
Spread butter or margarine thinly but evenly on both slices of bread.
Spread the KFC mix generously on one slice of bread. Top with shredded lettuce.
Spread mashed avocado on the other slice of bread. Combine the two halves to make a sandwich.
Cut into two to make mini sandwiches if desired.

hey, i thought you don’t like avocado? and that salad with leftover cooked veggies sounds very tasty. :)

I wouldn’t say it’s something I really like, but it’s growing on me. I seem to remember writing some time ago that my tastes are changing, and avocado is one of the things I used to hate but am growing more tolerant of in my old age. Heheheh. I wouldn’t actively seek it in a salad, but if it’s in a sandwich I will quite happily eat it. The main reasons I included it in this sandwich were 1) Jac had bought an avocado and we needed to use it up and 2) she loves avocado, so that was a good enough reason to put it in the sandwich. :)

IMO there’s only one thing you can do with leftover KFC , mix it with KFC potato and gravy and put it in a pie ( I use one of those small electric pie makers )

That sounds FANTASTIC! We don’t have a pie maker, but I’ve often thought about the different sorts of pies I would make if I did.

I wholeheartedly agree! I love it straight out of the fridge. Some people are put off by the congealed fat and grease, but I’m not! :)

I dont know if the food tastes good, but you present it REALLY well!
