With Jac still away, there was just me to eat the bread – so I made more sandwiches for lunch. I used 6 slices of bread, and ate one of the sandwiches at morning tea time.
Along with the sandwiches, I packed a small piece of dark fruitcake and some spinach leaves and cherry tomatoes.
I made three different sandwiches: fried SPAM, mayonnaise and lettuce; chicken, cucumber, and strawberry jam; and chicken, cucumber, wholegrain mustard and aioli.

The chicken, cucumber, and strawberry jam combo sounds intriguing. Is it anything like cranberry sauce and turkey?
I really miss the notes! Either Jac should come back right away or you should start putting notes in your own lunch. Which ever is more convenient for you :)

since it didn’t come with any introduction or description, i’m guessing you’ve made this before. now what i’m wondering is how you discovered this curious combination!
by the way, i love bacon, peanut butter and strawberry jam (grape jelly substitute; where can i get it here anyway?) — inspired by a spicks and specks episode which talked about elvis’ breakfast.

Yep, it’s similar. But I think strawberry jam is sweeter. I like using any kind of berry preserve with turkey or chicken in sandwiches.

I got the idea from turkey and cranberry. I made us sandwiches sometime ago with turkey and this jam we had – cranberry and blueberry preserve. It worked well. Another time we’d run out of the cranberry and blueberry, so I made turkey and strawberry jam sandwiches, and they tasted great. It wasn’t that big a jump to then try chicken with strawberry jam. :) I’ve also made curried egg and strawberry jam sandwiches, which I really enjoyed!
Oh yes, bacon, peanut butter and jam/jelly is a great combo. Bacon goes beautifully with so many sweet things…
