Bento – two varieties of KFC sandwiches

With KFC left over from a recent feed, I decided to make KFC sandwiches for our bento lunches.

Sandwich bento lunches

These were the sandwiches I made:

  • KFC mixed with aioli and Bavarian mustard, with spinach leaves
  • KFC mixed with 97% fat free mayonnaise and Christmas chilli jam, with spinach leaves
  • a kaya sandwich, for something sweet to finish with.

The Bavarian mustard came from a little jar we took home from our stay at the Hyatt!

Can you tell someone had an argument with someone else the night before? :) I knew Jac would love the sandwiches with the chilli jam. And she had forgiven me by the time she ate her sandwiches. And yes, she knows I love her even when we argue… after almost 12 years, it’s probably pretty obvious! :)

I went to uni yesterday afternoon and dropped off copies of my thesis for permanent binding. It’ll take a few weeks. My result will be ratified by the university only once I’ve lodged one permanent bound copy and an electronic copy of the thesis at the university library.

Tomorrow, it’s my last day of work at my current job. The last four weeks (I gave a month’s notice) have really flown by! There’ll be a farewell morning tea, and drinks at the pub (and probably food at the pub too!) after work. I will be a little sad to leave my wonderful workmates behind. They’ve already been saying, “Who’s going to take photos of our future morning teas?”

On Saturday, we have our family’s full moon celebration for my niece Zoe (see the photos from Ruby’s full moon in 2007) .

On Sunday, Juji, Jay and friend A are coming over for afternoon tea and to talk about housesitting for us while we’re away.

It’s going to be another busy weekend, but hopefully, there’ll be some good photos. And time to reply to your comments and emails. Thank you for your patience!

I miss kaya. I’ve yet to find a shop that sells it in Tokyo. I wonder which brand you use? My mum (who is a Nonya from Malacca) likes to buy the green kaya in a bottle labelled “Nonya Kaya” from the Asian grocery stores in Perth but I personally prefer the orange ones you buy in cans. I wonder what the difference is? Pandan maybe? I must remember to bring some kaya back to Tokyo when we go to Perth later this month.

Zoe makes me want to have more kids, lol. She’s beautiful. Take pics of her too (not just the food)! And give her lots of kisses on her cheeks. And smell the yummy baby smell.

So I guess the Full Moon is similar to the Korean 100 Days celebration. Can’t wait for the 40 images of curry’d chicken dishes! I’ll have to suck it up and order it/make it one day as I have yet to try the yellow/orange curry. The green Japanese stuff is not my friend.

Making sandwiches out of KFC, what a great idea! Now we can go buy a bucket and not have to waste anything! I especially like the idea of using jam. The crunchy, salt and sweet make a yummy combo! Good luck with your new ventures!

Yesterday I bought two bentoboxes for my boyfriend and myself. As soon as kitchens ready (we just moved together, and everythings a total mess) I´ll start making Bento! :D

Is the Bavarian Mustard you used that sweet kind of mustard? Which has a jam-like texture? I´m quiet interested, since I am from Germany, and at our kitchen, we have four or five different kinds of mustard.

The kaya I tend to buy is the greener/yellower kind, rather than the brown kind. I wouldn’t claim to be a kaya expert though – I just go with what tastes good to me. My mum’s homemade kaya is closer to green. :)

I always take lots of photos of the family and friends at all our family events (I’ve taken on the role of family photographer), but for privacy reasons, they are only viewable by family on Flickr. The odd Ruby/Zoe photos I feature on the blog are featured with the permission of my brother/sis-in-law. :)

Heh. The spinach and multigrain bread makes it a little more healthy, I guess. But I did include the KFC skin as well as the meat in the sandwich mix, so it was definitely not that healthy!

I love the Malaysian curry chicken at full moon parties. It was a great celebration. It’s been a very busy weekend, so haven’t downloaded the photos from the camera yet.

I like to transform it so it’s not just eating leftover pieces of chicken. And Jac loves sandwiches (as you’d know by now), so I take every opportunity I can to make her yummy sandwiches.

Thanks, Cookie. Oh yes – the sandwiches are a great way to ensure the KFC is all eaten up. Chilli jam is great with KFC – so is strawberry jam.

Congrats on moving in with your boyfriend! :-P I’m sure you’ll enjoy making bento lunches for the two of you. The Bavarian mustard isn’t that sweet – it’s sort of like a creamy, mild wholegrain mustard. Info about the bavarian mustard at the Beerenberg site.
