Fish, garden salad and pasta salad

Another fish and salad dinner: barramundi fillets coated in seasoned flour, served with garden salad and pasta salad.

The garden salad was very simple: mixed greens, cucumber, capsicum and grape tomatoes. I ate it just as it was, no dressing.

Jac used pasta bows (farfalle) in the pasta salad – she chopped the bows in half, though – she simply thought they were too big (I didn’t agree, but she was the cook, not me)! Through the pasta, she tossed chopped green beans, spring onion, carrot and corn kernels, dressing it all in mayonnaise. I loved the different textures of the various ingredients, especially the crunch of the beans and the popping of the corn kernels, all coated in creamy mayo.

This was Jac’s plate, with a few extras: tartare sauce on her fish, mashed avocado seasoned with salt and pepper, and a handful of capers.

LOVE the pasta salad. How ’bout Jac whips me up a batch and sends it by air mail?

People think I’m crazy for being able to eat a salad with no dressing! I don’t always do it, but once in a while, it tastes nice.

Jac chopped the bows in half? Did she do that individually? That must have taken a long time! It looks great though.

How did Jac cook the fish? flour then pan fry? did she use oil? I love the look of the texture…

This looks really good…

I haven’t had barramundi since I went to Oz quite a few years ago. Wonder if I can find some here? It has a very nice flavour, if I can trust my taste memory… ;)

The pasta salad is a underrated gem, thanks for reminding me of its existence ;)

I like plain salad like that, especially with peppers!

Farfalle pasta is one of my favourites for salads. I really like the extra chew bit right in the middle, connecting the two ‘fans’. Pasta salad with a bit of crunch – all good to me!

As long as the protein I’m eating is delicious, I am happy to eat the salad with no dressing. :)

I have no idea how she did that! I guess when she sets her mind to something, there’s no stopping her.

It was either pan-fried or oven-baked. I will ask her when she gets home (she is still away… I am waiting for her to return!).

I love barramundi – I always enjoy it. I am a big fan of pasta salad – I think next time I want to try making curried pasta salad, yum.

I love chewing on the bows too – which is why I was a little dismayed that Jac had cut the bows in half! LOL. It was still yummy, though.
