Omelette with bacon, mushrooms, garlic and onion

We had some bacon in the fridge to use up- so Jac chopped it into little pieces and fried it with mushrooms, garlic and spring onions (another thing in the fridge that needed to be used up!). She told me she’d use this mix in an omelette for dinner the next night. Mmmm, the anticipation! :-P

She made a big omelette filled with the bacon and mushroom mix. She served the omelette sliced into wedges, with a garden salad.

In the salad was lettuce, cucumber, cherry tomato, celery and broccoli, all fresh and crisp. Jac topped the salads with a little thinly sliced red onion. You may notice pieces of broccoli stem in the salad too – we don’t like to waste a thing if we can help it! Jac blanched the broccoli, so it was tender and no longer had that very raw, “green” taste.

The omelette was fantastic! I just picked up each piece and munched away. In fact, I ate my salad without cutlery too. :)

ROFL – glad I am not the only one who eats salad with their fingers also ! although not too much in public :P I’ve done it ever since I was a kid ( and used to get told off for it too ) It makes me sound like I have terrible eating manners, but it’s not really that – more like to me it does literally keep me in touch with the food and makes it more enjoyable.

Yummu looking omelette ! I think I’ve said this before but sometimes I enjoy making meals that use up oddments etc more than ” normal ” ones. Broccoli stems are great too – just as tasty as the rest of the veg – I just don’t understand people that throw them away !

that is a fantastic mix – bacon and mushroom, my 2 favouritest things! but wouldn’t the “omelette” constitute more as a frittata, given the amount of filling?

Pretty Presentation. The fanned omelette wedges complement the triangular salad. Inspires me to make more of an effort for DH when I put dinner on the table. Lucky you!

I usually eat bento salads with my hands too. No one ever looks at me funny or comments on my lack of table manners :) so I’ll keep doing it. Of course, if we’re dining out at a restaurant I do use cutlery like everyone else… though I will pick up chicken on the bone and eat it with my hands, no matter where we are. You leave too much meat behind if you eat chicken on the bone with a knife and fork. I agree about the broccoli stems. And mushroom stems too. I understand if you’re stuffing the mushrooms that the stem needs to come off to make room for the stuffing, but other than that, I don’t see why it’s necessary to remove the stems – yet people do all the time!

As we ate, we did have a discussion about omelette versus frittata – and didn’t come up with a definitive answer. If anyone wants to take on that debate, feel free! :)

Eating this reminded me of the omelettes my late grandma used to cook – she made yummy ones with prawn in them, or chopped green beans, or sliced onion, or minced pork. I loved pork omelette with rice.

The wonderful thing is, even before I started photographing our meals and before Jac became aware of an audience for her cooking i.e. you guys, she always made the effort to present the food she cooked in attractive and interesting ways.

I love omelettes! I like the beginning shot of the omelette filling–I’d be tempted to eat some of that by itself!

Cool that others talked about eating with their hands too. Yep!

I love the way the omelette was just an amalgam of what was left to use and yet came out so delicious. I need to think more creatively like that sometimes so I don’t let stuff go to waste.
