Food on a weekend alone (mostly SPAM and chicken)

Here’s some of the food I ate while Jac was away in Denmark (a town in Western Australia, not the country in Europe!) recently, starting with… no surprises for regular readers – SPAM! Whenever Jac’s away I will eat at least one meal of fried SPAM and egg, rice and baked beans. This time, I mixed corn kernels with the baked beans. This has to be my top comfort meal of all time. When I’m feeling down and exhausted (unfortunately, not a rare occurrence), this is the meal I cook for myself, and it always helps me feel at least a little better.

I rode my bicycle to the shops on the Saturday. It was a lovely day, riding in the sunshine with the wind in my hair, then walking around the shops and stopping to have lunch at Nando’s – chicken ribs and chips (AU$13.95 in combo with a drink).

The chicken ribs were succulent, saucy and finger-sucking good. Other customers came, ate their chicken, and left… and there I sat, like time stood still, meticulously sucking on every single chicken bone till not a scrap of meat or sauce remained.

I also cooked one of my “green” stir-fries for dinner that weekend – this one with bok choy, baby corn spears, mushrooms and chicken, loads of garlic and oyster sauce, and a little sesame oil to finish.

While digging around in the fridge, I found a paper bag with a surprise Jac had left for me – mini quiches and mini sausage rolls! I thought it was sweet of her to leave me a surprise of pastries! :) Here they are just after I microwaved them for a quick snack.

And of course since I’d opened the tin, there was more SPAM to use up. And because there was leftover rice in the fridge, it made sense to cook my favourite fried rice, with SPAM, green beans, egg, garlic, oyster sauce and soy sauce. I really do like eating my favourite dishes over and over again. I’m really a woman of simple tastes. Sitting at my computer, eating a bowl of SPAM fried rice on a weekend alone… happiness.

Poor you for having to eat all that yummy food alone! I love how creative you always get with your Spam! We usually just make sandwiches!

some woman (like my roomate) sit alone and eat ice cream in thier jammies… I can totally picture you with your spam… just dont tell me you eat it right out of the can ;-)

Looks like you had a feast while Jac was away! What part of the chicken is the rib part-is it literally the rib cage? They look tasty.

Just stop by to say what a great fan I am of your blog. Its amazing to know how much we share in common in terms of foods! I too love eating spams, enjoying savoury things-esp curries- for breaky, and don’t mind eating some food cold!
I’m currently expecting now, and I want you to know how much your blog has helped me go thru my nauseous days! Keep up the good work! *muacks*

i find SPAM pretty salty. so if you make sandwiches with SPAM, how do you reduce the saltiness ?

I enjoy eating my favorite dishes over and over again as well… first of all because I am lazy and usually don’t feel like spending a lot of time in the kitchen when I’m just cooking for myself. But I have to admit, my fav dishes never get stale or anything like that. I always enjoy them 100%. So I guess that’s allright :D

I don’t mind some alone time. I never feel too lonely as we talk on the phone every day when Jac’s away, and I have the cats hanging out with me the whole time. :)

Nah, I like it fried, so I have to take it out of the tin. But I am quite fond of baked beans straight out of the tin. All I need is to pull the ring to open the tin and then dig in with my spoon.

No idea! I’m pretty sure it’s not actually ribs though. They are extremely tasty.

I don’t know what Cookie does, but I find thick-cut bread, mayonnaise and lettuce are good accompaniments to SPAM. Don’t worry, there will be more SPAM fried rice pics – I can’t imagine my life without regular SPAM fried rice meals!

I guess I do try out new things sometimes as I don’t want to bore readers with too many repeated dishes/photos! But yeah, it’s so good to cook the simple, quick favourite dishes, especially when alone.
