Baked chicken, mushroom and potato casserole

This was a delicious dinner Jac cooked – chicken and mushroom casserole, made with chicken pieces, sliced potatoes and fresh button mushrooms, all baked in the oven.

She served the casserole with corn kernels and peas. She’d left the chicken on the bone, and it was tender and flavoursome.

I kept going back to the dish and eating more potatoes and mushrooms and gravy. I enjoyed the leftovers over the next couple of days. Sorry, no recipe – Jac just made this one up as she went along.

Wow that looks truly, totally fabulous! I love casseroles because they are so tasty, relatively easy to make, and you always have leftovers for lunch the next day!

Yummy-yum! On-bone chicken is the best. Usually I don’t like mushrooms, but this dish would be an exception. :-) Nice presentation too.

YUM! This looks SO good! I love it when you can just take a few ingredients and turn it into a great dish with LOTS of left-overs! I wish you had a recipe!

Chicken left on the bone is usually moister and yummier, but I’m a very lazy eater. I love boneless chicken thighs in stews and casseroles! ;)

I know chicken is supposed to be at its most flavoursome and tender on the bone, but I like it either way, any way!

Sorry! Sometimes there will be a recipe, most of the time there won’t be. It’s just how Jac cooks.

Pretty sure there was no dairy in it. I will double-check.

Boneless is good, no need to worry about bones, just dig in and keep eating until the plate is completely empty and clean. :)

I can eat dishes like this all year round. Jac prefers less hearty meals in summer, but I’d be happy with this on a 40C day!

I told Jac she could’ve put puff pastry on top and made a chicken and mushroom pie! That would’ve been AWESOME!
