Corned beef, corn and rice (forgot the egg!)

Jac said she had a craving for my corned beef, egg and rice dish, so I made it for dinner. I always call it “corned beef, egg and rice” because that’s what the dish started out as, but somewhere along the way in the 16 or so years I’ve been cooking this dish for myself (and then for Jac too) I added corn kernels. I reckon the pop of the corn makes the dish even more enjoyable to eat. I love how food tastes, looks and smells,but I also like how it feels in my mouth, especially under my teeth when I bite it – I love the pop of juicy corn kernels! Texture plays an active, significant part in my enjoyment of food. Are there any foods you particularly enjoy or dislike because of how they feel?

It was only after I’d served it up in the bowls that I realised I’d forgotten the eggs! It seemed silly to put the rice back into the wok at this stage, so on this occasion we had corned beef, corn and rice. :) Jac enjoyed it and said it satisfied her craving, so as far as we were concerned, it was a success! :D

looks great,i’m definitely trying that!! i LOVE corn kernels, i make chilli a lot & always overload it with corn kernels, i love the popping feeling! also, raw broccoli, the head, not the stalks. that feels cool :P
and i dislike mussels & oysters, i just can’t do slimy :P

This reminds me of a restaurant chain there is in Singapore (I have been discovering and rediscovering many delicious eats!) called Pepper Lunch (http://www.pepperlunch.com.sg). Corn kernels, sticky Japanese rice and yummy beef slices on a hot plate which u mix with a piece of creamy butter and sauce of your choice; i think it’s between honey brown sauce and garlic soy. VERY YUMMY. And affordable at SG8 per serving. It’s huge so I usually split it with a dining companion!

Looks good. :-) I often put corn kernels in rice dishes. As for the *feel* of food while eating: The softness of a right-cooked potato; buttery crunchiness of toast; roughness of a well-salted pretzel; gooey melted cheese and soft-yolk egg in a breakfast sandwich; texture of most breads.

One dislike is most seafood though: If it has a rubbery consistency, forget it. :-\

Looks great. Corned beef with rice! The corn adds a great pop of color.

My fave food that gets a good feeling under the teeth? Asparagus, lobster…. Does that count? Great post!

I put corn in just about everything! Nature’s most perfect food! My co-workers make fun of me I abuse the use so much! I’m a huge fan of the way pomegranate seeds pop…like in a spinach salad! I also love the pop of a whole peppercorn in dishes (especially corn dishes). Can’t do anything gummy or gelatin though – ick!

I love corned beef! I should get a can of it soon and try your recipe, yum yum! Yeh just like bloo said you could’ve put topped the rice off with a sunny-side eg..nommm.

I absolutely detest the texture of sea cucumber! Its slimy texture makes me gag.. but strangely, I can stomach raw oysters, coconut flesh..other “slimy” things like that?

I also hate eating pasta that’s been overcooked.. it’s such a waste of calories and uneccessary carbs! I think rice is slightly more forgiving in that sense..mushy rice can be converted in porridge!

Greek dessert yogurt has a really nice texture and i hate the texture of avocados,your dish looks great,corn in stir fries to me is always great

My – Indonesian – grandmother used to make me this and I loved it. And now I’m going to go to the supermarket and get a tin of corned beef to make it too.

You have now made me rediscovered my passion for corned beef! I too love the texture of foods. I enjoy most textures but the one thing I don’t enjoy is overcooked meat. It’s just so dry and stringy. I agree with laundrydays in regards to overcooked pasta. It’s gross!

I thought I was the only person who enjoy eating corned beef with rice this way!! The idea of adding corn is awesome, I will try it next time.
