Bento – Sascha Jane’s chicken with salad

As I put away the leftovers from our family dinner I packed the next day’s lunch for Jac and me. There were three chicken skewers left; I pulled the meat off the skewers and divided it between two lunch boxes. I added lettuce, cherry tomatoes, sundried tomatoes, sliced sweet gherkin pickles, tasty cheese and asparagus. Jac got something extra in her lunch box – pickled onions. I like onions, but not pickled ones. Jac loves them. I’ve never found a pickle she didn’t like.

Looks like a great lunch: filling and healthy! Those pickled onions look very pretty (I’ve always liked pearl onions). I’ve never tried them, so I can’t say whether or not I’d like them–it would probably depend on their texture: if they were too crunchy, it might ruin it for me.

I love seeing creative ways to use up leftovers. I eat at home most days but pack my daughter’s lunch for school so like browsing the bento ideas, although I don’t do strict bento. ;)
