Jac emailed me during the day and said she’d be cooking roast chicken and vegies for dinner. Excellent! I looked forward to it and couldn’t wait to get home! :-P
She served the roast chicken with roasted potatoes, carrots, sweet potatoes and onions and steamed broccoli.

Yum, you can’t beat a roast chicken dinner and trimmings. I love sweet potatoes and parsnips to go with it. Your plate looks delicious and I’m sure it must have tasted fab. Well done to Jac!
MmmMmmm!! A smear of butter and a bit of sour cream for the roast potato… Looks divine, all of it. :-D I made a panful of roast vegetables (same as Jac’s) in October; turned out delicious.

I don’t normally like roast dinners (unless they are cooked by someone else) but recently roast chicken has been turning up on our mid-week table quite a bit,
Parsnips and butternut squash are a must.

I didn’t need anything else to go with the potatoes – they had so much flavour just from being cooked in the same tray at the chicken.

I told Jac what you said, and she laughed and commented “sounds like a country song!” We decided the song would go something like “She didn’t love me for myself…she only loved me for my cookin’”! Heheheheeh. Totally fictional, of course. :)

I love roast dinners midweek! That leaves the weekend for other treats. :)
