On the night Jac was due home from Melbourne, my dinner was my old favourite, fried SPAM and egg with rice, baked beans and corn kernels.

The only way I’ve ever eaten spam is spam musubi, but that looks pretty good. Loving the addition of corn to the beans.

I’ve been pondering on giving this a try for a few months now after seeing it on this blog. When I saw this posted it finally sealed the deal and I went and picked up some Spam.

I have the perfect opportunity for it later this week ^^.

back when i was in college and didn’t know how to cook, i used to do ‘egg and spam fried rice’. fry eggs, spam, spring onions and rice together and season with a little soya sauce and sesame oil. on good days, this was topped with chicken nuggets and a dollop of ketchup. it wasn’t gourmet but certainly kept me alive :)

I am yet to try SPAM musubi (not something we can buy here, I would have to make my own and to date have been too lazy). I reckon I’d love it – I love sushi, I love SPAM, so it’s a no-brainer! I love baked beans and corn – could eat them cold out of their cans, together or separately, any time.
