I wrote recently about one of my favourite meals of all time, a roast pork dinner. Here’s another meal that I love, roast chicken dinner!
Here’s the plump roasted chicken, rested and ready to be carved. Jac stuffed the chicken with sage bread stuffing and rubbed it with herbs all over before putting it into the oven. It smelled fantastic.
Before Jac began carving, I took great pleasure in looking at that magnificent plump chicken and breathing in its delicious aroma.
She served the chicken and stuffing with roasted vegetables (carrots, potatoes, onions and eggplant) and peas – always, she has to have something green on the plate! The chicken was so moist and tasty I didn’t need any sauce or gravy.
I love roasted whole onions. I love eating my way through the layers to the sweet centre of the onion.
The potatoes were golden and crispy on the outside, fluffy on the inside. The carrots were tender and sweet. But my favourite vegetable was the eggplant, all soft, rich and smoky, so tasty I wanted more! This was the first time Jac served roasted eggplant with roast chicken – I hope she’ll do it again.

I love roast chicken! I just love chicken period. Jac’s looks lovely. She could go into business as a party planner. Guess who would be her food taster. I don’t mean Pixel! Jac cooks, you taste! I love all roast meals-soul satisfying. You are right about the emu. It’s mind over matter with me. It drives Ric crazy!
I just read the stuffing ball post. I don’t know how I missed it.I have to tell you, when Ric makes a standing rib roast , he puts the roast up on a rack,greases the pan and before the roast is done, he pours the pudding in. All the juices drip into it. So delicious! I know you would love it!
After reading your post I want roast chicken and I want it right now!
Mine would be almost the same as yours, roast potato, roasted onion & peas. I would add gravy (don’t mind if it is homemade or out of a packet) and roast pumpkin to my plate.
And I love the leftovers in sandwiches for lunch the next day.
Mmm, I love eating my way through layers of onions too. They’re so sweet and yummy, but even better with roast chicken! :D

the best roast dish (w crispy potatoes!) ive seen is one of nigella lawson’s recipes for roast turkey. but i’d switch the turkey to chicken of course!
i know this sounds kinda lame, but back in the day when Kenny Rogers (the restaurant) was actually quite good, i LOVED their roast chicken.
Everything but the eggplant, though I’m glad you enjoyed it. That is a superb meal. A bit of butter and sour cream for the potatoes! That chicken looks incredibly succulent and I’ll bet the stuffing was oh-so-satisfyingly savory. A bit of cranberry relish for it…
I have not roasted a chicken in forever… Jac’s looked so good maybe I need to… I do love it shredded up with tortillas and fresh salsa tho!
My perfect roast chicken is one that is served with cranberry and sage stuffing, and a size of creamy orzo. Yum!
Not sure if it’s a crime to admit that i LOVE the simple roast chicken from Coles. Nice and warm and juicy and ready to eat any time! Here in the UK they dont have that :( they have pre-roasted chicken but it’s cold BOOOOOOO…. anyway, *heart roast chicken*
oh man TFP, sometimes the posts you put up are almost criminal. That chicken has been haunting my mind since you posted it! you know what you should get jac to try? Get her to caramelise sliced onions with light soy sauce and sugar, with a little dark soy sauce for colour. I am sure you gals would love it!! It’s just that it takes some time to cook down the onions, but its so bloody worth it! And it is a fantastic side dish for the chook!! Don’t even get me started on garlic mushrooms which i know you love too. MMMM.
How did Jac make the potatoes so crispy and golden brown?
That roast chicken looks great! At home we usually score the breasts and legs with a sharp knife to make deep cuts and then we rub a combination of masala paste and lemon juice into the cuts. This gives the roast chicken a nice spicy flavor when its done! :)

Hahaha, I cracked up when I read your comment re: Pixel not being the food taster! She sneaks into the kitchen whenever Jac cooks because she knows there may be yummy tidbits to sample. If there’s anything dropped on the floor, Pixel will find it and eat it up. I love chicken too. I can eat it three meals a day. Jac tries to ensure that doesn’t happen though. If she knows I’ve had chicken for lunch, she will endeavour to cook a different protein for dinner (even though I tell her I’d love chicken again for dinner). :)

Although I didn’t need gravy, Jac always needs a sauce so she had some packet gravy. I love packet gravies but they tend to make me feel terribly thirsty afterwards, so I avoid them these days. Oh yes, leftover roast meats make wonderful sandwiches!

We love roasted, fried or grilled onions! Jac likes to cook onions with roasts but also with sausages and with grilled pork chops. A meal doesn’t seem complete without the onions. :)

Hahahaha, I knew you’d mention the butter and sour cream! ;) Jac likes to dig out all the condiments when we have roast, the cranberry or apple sauce, mustards, butter etc. It was a delicious meal.

I don’t think I’ve ever had orzo as a side dish in a meal, but I reckon I’d really like it. Jac would be right with you on the cranberry and sage stuffing!

No, it certainly isn’t a crime to admit it (DEFINITELY not a crime here at this blog!). We enjoy a good old supermarket cooked chook more than occasionally. I love smelling it through the warm bag – like fish and chips wrapped in paper, one of the best “packaged” food smells ever.

We’re in the midst of summer, so roast chicken is off the menu until it cools off, but when I roast chicken I usually roast two or three at a time. I usually salt and pepper the cavity and stuff the chicken with red and green bell peppers, onion, celery, carrots, and lots of garlic cloves. I serve roast chicken with mashed potatoes, cranberry sauce, chicken gravy, and peas (I love peas and mashed potatoes smooshed together). The rest of the chicken gets boned and frozen for future use in chicken enchiladas, chicken pot pie, and my version of chicken and dumplings. Then I take all the roasted vegetables and bones and make homemade stock.
