Jac made me tacos recently, with beans and beef mince, hot sauce and lots of salad. And I mean LOTS of salad – can you even see the beef and bean mix? :)
It was buried in there, and it was yummy. But regular readers will know about Jac’s ongoing crusade to get me to eat more vegetables. Let’s just say she seized this opportunity! I didn’t mind at all. I love crispy warm corn tortillas – that’s enough of a distraction from all that salad content! :-D

Where’s the cheeseeeeeeeeee? You need some cheese on that! hehe I actually prefer the soft tortilla more than the hard taco shells now. I find I can put more stuffing into the soft ones hehe

SoRMuiJAi,
I don’t eat much cheese generally speaking, and if I can leave it out when eating Mexican, I do so! (Cheese makes me all gluggy, so I am very selective about how much and when I eat it). I enjoy my tacos without cheese, so am quite happy to leave it out. :)

mmmm! taco’s are one of those things that are simple and DELISH. I’m not a huge fan of cheese either, I can totaly go without but my boyfriend drowns his in cheese. To each his own! :)

Reading this post now is making me really hungry and it is only breakfast time in the UK. Wouldn’t be a great fan of cheese either, so happy to eat tacos without them. Just about to make bill granger’s ricotta hotcakes, but the taste of the cheese is very subtle which suits me just fine. Happy Sunday!

I LOVE tacos!!!
Yum yum yum!! I add cheese and sour cream and eat until I need to undo the top button of my jeans :P
We always buy the pack with the soft and hard shells in it to mix it up :) Might need to make these this week!!
They look great!! Good work Jac!

I love eating crispy tacos! It’s so satisfying hearing the crunch and then the taste of savoury goodness. Such a shame that my partner likes soft tacos :(

Mmmm, tacos look great, I do sometimes have them with cheese but I agree with Jetgirl too.
I do like them heavy on the mince and guacamole.
Now, what to have for breakfast….!

These tacos look delicious! And it’s always better to try to eat more vegetables… even though I know they’re good for me, I’m often too lazy to eat them!

It still sort of amazes me that Mexican food is seemingly so well known now in the UK and Australia. Around 2005, while watching an episode of Jamie Oliver, he had a chile ristra hanging in his London studio kitchen! :-o Wow. Even 17 years ago in the Midwest of the US most people still hadn’t eaten a homemade enchilada nor heard of chipotle, nor new what fajitas were; and now they’re on menus abroad. Interesting. I live in the Desert SW of the US with plenty of Mexican food; have learned to make it as well. Nearest Mexican restaurant is a scant 4 blocks away; authentic stuff with homemade pinto beans and rice. Better quit thinking about it though, lol! Jac’s tacos look good.

catty,
Yep, it works well in our household. Jac loves cheese and all drown hers too! But since I don’t have any, she just has to grate enough for herself. :)
Gcroft,
Mmmm, I’ve seen Bill Granger cook the hotcakes on TV and have read the recipe in his book(s), but never tried it. I’d like to, though. Maybe next time I am in Sydney I’ll just have to stop by one of his cafes for breakfast.
Linda,
We buy the soft/crispy combo pack too. But although we have our preferences (I prefer crispy, Jac prefers soft) we don’t mind eating what the other person prefers. We mix it up, so we each get to eat what we prefer.
jetgirl,
I think Jac wouldn’t want a taco without cheese – she loves cheese too much and will use any excuse to have some. :) She’d have it with cheese AND guacamole (she loves avocado too, though not as much as she loves cheese).
dea,
Mmmm, what a lovely string of words – “crispy warm corn tortillas” ! :)
Sarah,
We don’t have tacos that often, but I’d be happy to eat them more regularly, as every time I eat them I enjoy them so much.
clekitty,
We buy a combo pack that comes with soft tortillas and the crispy shells! It’s the perfect solution. (We get the Australian packaged equivalent of this: http://www.amazon.com/Old-El-Paso-Shells-7-4-Ounce/dp/B000EMQFB2)
kissy,
TACOS! Lol. :-P
Megan,
I do try to eat vegetables more often than I used to when I was younger. But it does help that Jac’s always on my case to eat more vegies.
Cindy,
Oh yes – it’s very popular over here. Probably not so authentic, but definitely known. One of our favourite restaurants that we haven’t been to in a while is a Mexican one called Panchos – see this old post from 2006: Happy Birthday to me!
Bryan,
Hahahaha, I love beans, and I love beans in tacos. :)
