Rice noodles with pork and vegetables, topped with pickled green chillies
Posted @ 4:19 am under Home cooking, SavouryWe had some noodles leftover from laksa night, so Jac made a two-noodle stir-fry with carrots, onions, cabbage, garlic and egg. We had a chunk of roast pork in the freezer which Jac defrosted, sliced up and threw into the stir-fry. I couldn’t believe how tender the roast pork was! I know I couldn’t believe it, because I kept going on and on about how tender it was. Initially, Jac was chuffed, but I think by the time I finished my dinner she was sick of me raving on about that pork! I ate a big bowl of noodles topped with lots of green pickled chillies. I got through all the chilli you see in the photo by the time I was halfway through the noodles, so I just got more chilli out of the jar. :D The noodles looked like a sloppy mess but they were yummy! I enjoyed the leftovers for breakfast the next morning. Yes, with more pickled chillies.

Those peppers are known as the “jalapeno” here (ha-lah-pay-nyo). :-) Hot! To me they’re a “Mexican” pepper, always associated with nachos and tacos especially. No offense, but it’s strange to my eye seeing jalapeno rings in that dish. ;-)
An El Paso, TX restaurant chain called “Taco Cobana” offers “fuego” on its salsa bar. It is made of roasted jalapenos which are then pureed. It is a smoky spicy delight unlike any other. :-D

Ahh you are just like me. I am soooo not a fan of “breakfast food” & almost always eat leftovers or actually make myself a dinner meal for breakfast. Sometimes, when strapped for time, it is nothing more than a microwavable lean cuisine ;)

Ooh I love roast pork leftovers. They somehow taste better transformed into part of some yummy dish. I recently doggy-bagged leftovers from a German roast pork knuckle meal and turned the meat into a tasty stir fry with wood-ear fungus and cabbage. With white rice, it was so tasty. I imagine the tasty meat would go really well with green beans too.
The bone, got turned into a tasty broth which lasted me for days since I live alone. Added noodles and veggies one day, potatoes and carrots another. I declare my love for roast pork leftovers. :D
