Jac's bento - Thai red curry chicken sandwiches, salad, strawberries and sweet crackers

For dinner, Jac baked chicken pieces in the oven, marinated with slatherings of Thai red curry paste. For lunch the next day I took the meat off the bones of one of the leftover chicken quarters and made us red curry chicken sandwiches.

My bento lunch - fried chicken, tomato sauce, rice, ginger vegetable stir-fry and mini jam and kaya sandwiches

Jac sliced up chicken thigh fillets and marinated them with salt and pepper. She then coated the chicken in “Kentucky” seasoning – we buy this in a box from the asian supermarket. She fried the chicken until it was crispy on the outside and poppingly juicy on the inside.

Bento - ginger chicken and vegetable stir-fry and rice, strawberries and prunes

packed lunch for myself the next day – leftover ginger chicken and vegetable stir-fry with rice, and strawberries and prunes. It tasted just as good the next day at work, if not better! I was secretly very proud of the delicious aroma that filled the kitchen as I heated up my lunch in the microwave. “Yep, that’s my lunch.”

Jac used up the last of the strasburg sausage, chicken, corn and green beans and cooked up a batch of fried rice. I packed us bento lunches the next day with fried rice, orange wedges and strawberries.

Chicken and salad bento lunches for two

As I put away the leftovers from our family dinner I packed the next day’s lunch for Jac and me. There were three chicken skewers left; I pulled the meat off the skewers and divided it between two lunch boxes. I added lettuce, cherry tomatoes, sundried tomatoes, sliced sweet gherkin pickles, tasty cheese and asparagus. Jac got something extra in her lunch box…

I packed us deluxe sandwich bento for lunch the next day. This is my own terminology – sandwich bento is just sandwiches; deluxe sandwich bento comes with extra bits and pieces in different compartments. :D

Bento - chicken with two salads

Jac panfried chicken thighs seasoned with salt and pepper so I could use them for bento. I packed us some bread and butter, leftover potato salad, and made a quick salad of cos lettuce, carrot, cucumber, snow peas and pickles.

Of course, I had to include a little note for Jac in her lunch ...
