Roasted root vegetables - carrot, sweet potato, butternut pumpkin, shallots

Boxing day lunch with my family, featuring baked ham, roast lamb, duck fat roast potatoes, roasted root vegetables and steamed greens. For dessert: an enormous trifle and macarons filled with lemon curd with raspberry gel centres. The very next day, my nephew Caleb was born!

Fried Christmas ham with french toast and maple syrup

I love Christmas ham! This time we enjoyed thick slices of ham lightly panfried, served with French toast and maple syrup. We had leftovers from two different Christmas hams this year, which we froze and then retrieved later. This was the ham from Christmas breakfast with my family.

Leftover Christmas prawn and turkey noodle stir-fry

We ended up with leftover Christmas turkey, ham and prawns. We froze most of the ham but ate all the turkey and prawns over the next couple of days. This was my favourite dish cooked using the leftovers: a Christmas prawns and turkey noodle stir-fry.

Pixel wants ham steak

This is Pixel. She wants a bite of ham steak. On a weekend a few weeks ago, Jac fried ham steaks for both of us. She fried me one egg, sunny side up (I asked for one egg instead of my usual two). She poached herself a couple of eggs, and with a packet of instant hollandaise sauce and a sprinkling of fresh parsley, made herself eggs benedict.

Bento -  hard-boiled egg, cold meats, pickles, salad and fruit

I was very pleased with these bento boxes I put together for us. I’d asked Jac what she’d like for lunch, to which she said, “Cold meat, salad and pickles.” That’s exactly what I packed us – with a few extra bits and pieces.

Sandwich bento

If we happen to have fresh bread, salad and sandwich filling-type items in the fridge, I like to make sandwiches for our work lunches as I know Jac loves sandwiches.
